July 14 is National Mac and Cheese Day.  Did you know there was a National Mac and Cheese Day?  I didn’t, but what a delicious comfort food to celebrate – especially for those Preggers mamas.  Is anyone out there craving Mac and Cheese?  Below are some scrumptious recipes to help satisfy those cravings.  Make some now and enjoy OR save it for National Mac and Cheese Day!

Classic Baked Mac and Cheese

Ingredients:

  • Kosher salt
  • 8 ounces of fusilli or other short pasta
  • 4 tablespoons unsalted butter, plus more for baking dish
  • ¼ cup all-purpose flour
  • 2 cups whole milk, heated
  • 1 bay leaf
  • Pinch of freshly grated nutmeg
  • 2 ½ cups shredded sharp white cheddar cheese
  • 1 ½ cups shredded gruyere cheese

Bring a pot of salted water to a boil; add the pasta and cook until al dente.  Reserve 1 cup cooking water, then drain the pasta.  Preheat oven to 400 degrees F.

Meanwhile, melt the butter in a large saucepan over medium heat.  Whisk in the flour and cook, whisking, 2 minutes, then whisk in the milk.  Add the bay leaf, nutmeg and 1 teaspoon salt and simmer, whisking occasionally, until thick, 8 minutes.  Remove the bay leaf and stir in 2 cups cheddar and the gruyere.  Stir in the pasta and the reserved cooking water to make a loose sauce.  Butter a 2-quart baking dish; add the pasta mixture and top with the remaining ½ cup cheddar.  Bake 15 minutes.

So, that’s a classic baked Mac and Cheese, but sometimes you want something a little more reminiscent of your childhood.  So, here is an American Mac and Cheese recipe.

American Mac and Cheese

Ingredients:

  • Kosher salt
  • 8 ounces of elbow macaroni or other small pasta
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon mustard powder
  • Pinch of cayenne pepper
  • 1 12-ounce can evaporated milk
  • 1 ½ cups grated mild yellow cheddar cheese
  • ¼ cup diced processed cheese, such as Velveeta
  • Freshly ground black pepper

Bring a pot of salted water to a boil; add the pasta and cook until al dente.  Reserve 1 cup cooking water, then drain the pasta.

Meanwhile, melt the butter in a medium saucepan over medium heat; whisk in the flour, mustard powder and cayenne and cook, whisking, 1 minute.  Whisk in the evaporated milk and simmer, stirring occasionally, until slightly thick, about 5 minutes.  Stir in the cheeses, then the pasta and just enough of the reserved cooking water to make a thick sauce.  Season with salt and black pepper.

The website www.foodnetwork .com/recipes/articles/50-mac-and-cheese-recipes takes these two basic recipes and details how to jazz them up a little bit.  With varieties including French Style, Barbecue Style and Bacon Chipotle, there’s really something for most tastes.

These sound delicious and I truly love Mac and Cheese. I’ve kind become a Mac and Cheese snob of sorts.  I prefer unique and delicious additions to your typical Mac and Cheese.  This recipe from www.delish.com is my absolute favorite!

Cornbread-Topped Apple Macaroni and Cheese

Ingredients:

  • ¼ cup of butter
  • 2 tablespoons of butter
  • 1 tablespoon of olive oil
  • 1 cup of diced yellow onion
  • 2 cups of store-bought cornbread muffin crumbles
  • 2 cups of uncooked elbow noodles
  • ¼ cup of all-purpose flour
  • 1 cup of half-and-half
  • 1 cup of whole milk
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • ½ teaspoon of ground cinnamon
  • 1 pound brick of extra sharp cheddar cheese (shredded)
  • 1 ½ cup diced Granny Smith apples (or other tart apples)

Preheat oven to 350 degrees F.  Melt 2 tablespoons of butter and heat olive oil in a medium skillet over medium high heat.  Add onion and sauté until tender, about 5 minutes.  Add cornbread crumbles, stir to combine, and remove from heat.  Set aside.

To prepare macaroni and cheese, begin by bringing a large pot of salted water to boil.  Add noodles and cook according to package directions for al dente.  Drain well and set aside.

In a medium saucepan, melt remaining ¼ cup of butter over medium heat.  Add flour and cook about 2 minutes or until rue is golden.  Slowly whisk in half-and-half and milk; stir until mixture has thickened and slightly darkened, about 3 minutes.  Season with the salt, pepper, and cinnamon.  Slowly add grated sharp cheddar cheese, a little at a time, and stir until completely melted.  Remove pan from heat.  Mix in reserved noodles and apples.  Stir until well combined.  Pour pasta mixture into a greased 2 ½ quart casserole dish and top with reserved cornbread mixture.  Bake 30 to 35 minutes or until bubbly, and golden on top.  Remove from oven and allow to cool 10 minutes.  Serve warm.

Yum!  Delicious!  Make some now and freeze it to save for after the baby is born.

How about a refreshing lemonade drink that is perfect for those summer baby showers!!  Have your shower hostess prepare a punch bowl of this delicious concoction.  Add a little blue food coloring to “blue” it up if you need.

Day One – January 27

Up first, Three Layer Chocolate Cake.  Two pounds of chocolate goodness.  This three layer cake is filled with rich chocolate cream, surrounded by chocolate glaze and finished with an elegant chocolate border.  Can’t get more chocolate than that!

Day Three – January 29

Finally, a Chocolate Mousse Torte.  Can you say death by chocolate?!  This cake is filled with two layers of creamy chocolate mousse, for an incredibly moist and delicious experience.  The cake is finished with chocolate icing and glaze and an adorable chocolate “Love” plaque.

Sharing this fantastic recipe for Easy Chicken Enchiladas – easy to make, tastes great, and makes a great freezer meal for post-baby!  I plan on making several for after baby #2 🙂  Enjoy & be sure to share your recipes in the comments!

Easy Chicken Enchiladas

1 can Rotel tomatoes and green chilies, drained
1 (8 oz) pkg cream cheese, cut up and softened
3 chicken breast (fresh or thawed….frozen might make it too runny)
8 (8″) flour tortillas (depends on how much filling you put in each)
2 cups shredded Monterey Jack cheese (I used some Cheddar/Colby with it)
spinach (optional)
1 pint whipping cream

Directions
Put chicken breasts, cream cheese, rotel and green chilies in slow cooker.  Cook on low for 4-6 hours until chicken is tender.

Shred the chicken in the slow cooker (it should shred up pretty easily with just a fork).

Spoon 2-3 tablespoons of chicken mixture down center of each tortilla. Add some spinach if you like.  Roll up tortillas and place seam side down in a lightly greased 9×13 baking dish. (This is where you’d stop and package for freezing – I’ve found a combo of saran wrap & foil works nicely. Be sure to thaw before you cook.)

Sprinkle with Monterey Jack cheese, and drizzle with whipping cream.

Cover with foil and bake at 350 degrees for 30 min. Take off foil and cook for another 15 mins, or until top is golden brown.

Serve with your favorite taco topping: black beans, lettuce, tomato, sour cream, onion, guacamole…..whatever you desire!

cookies-sugarSugar gives us energy, right? Well, not good energy – plus it usually putters out eventually.  Find some real energy boosters that will last below:

  • Oatmeal – Do your best to get something in you before you head out the door in the morning!  Breakfast is like fueling up your vehicle for the day – it is a must.  Oatmeal is great for its long-lasting combo-fuel of fiber and complex carbs.  The vitamin B in oatmeal also helps with energy.  Back to my point about sugar – watch out for flavored oatmeal as it can have a bit too much sugar.  Use natural sweeteners on regular oatmeal instead like brown sugar, honey or fruit.
  • Almonds – Just a small handful of almonds pack a great energy boost.  Not ideal for a meal but great for your “I’m starving” moments throughout the day.  They contain the good kind of fats to keep you going plus calcium, protein, zinc & iron.
  • Lean meats – Choose lean red meats if possible for the greatest source of protein, zinc, vitamins and iron.
  • Yogurt – What a fantastic source of healthy, energy producing protein, calcium and magnesium!  Another warning about the flavored options here – look for the non-flavored options on the lower shelves and add your own honey or fresh fruit as a sweetener.
  • Bananas – besides helping with leg cramping, bananas are also a great source of energy.  Their potassium, fiber, and vitamins prove more filling than most fruits.

Some other energy-packed foods include lentil beans, dark chocolate, peanut butter, brown rice, multi-grain bread, pumpkin seeds, oranges, apples, spinach, black beans, eggs, broccoli and sweet potatoes.  Besides food, exercising, a good night’s sleep and compression stockings (check out Preggers) are great ways to boost energy during pregnancy.

Soup, like winter, may be making it’s exit but I feel like there’s still a place for a big bowl of healthy. I’ll be honest, I was skeptical but decided to give this a try. As a somewhat picky eater, this was fantastic! Reminded me of Wisconsin Cheese Soup in a way. I highly recommend 🙂

Butternut Squash Soup

  • 6 tablespoons chopped onion
  • 4 tablespoons margarine
  • 2 medium butternut squashes
  • 3 cups water
  • 4 cubes chicken bouillon
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground cayenne pepper
  • 1 (8 ounce) package cream cheese
  • 1 tablespoon minced garlic
  • 2 tablespoons olive oil

First, we must roast the butternut squash.  I prefer to cut them in half the long way, scoop out the seeds, brush with olive oil/garlic and then roast at 400° flesh down in a pan with about an inch of water for about 25 minutes or until fork tender.  You can find any roasting recipe and use that as well.  Peel and cube the squash after roasting and set aside.

In a large saucepan, saute onions in margarine until tender. Add squash, water, bouillon, marjoram, black pepper and cayenne pepper. Bring to boil; cook 5 minutes.

Puree squash and cream cheese in a blender or food processor in batches until smooth. Return to saucepan if the soup needs to heat through but do not allow to boil.

Eggplant Parm

As a person who is not a fan of most raw veggies, I have to get creative to get in pregnancy power foods like eggplant and spinach.  Enter this Eggplant Parm recipe.  With a bit of garlic bread (not too much!), it’s like eating really chunky spaghetti sauce.  No noodles, just veggie-infused chunky glorious sauce.  Enjoy!

Ingredients

2 large eggplants

4 garlic cloves

3 cans of chopped tomatoes

2 onions, diced

5 large mushrooms, sliced

2 handfuls of spinach

1 handful chopped basil

1 egg beaten

1/2 cup parmesan

1) Slice the eggplant into thin slices and put on an oiled baking tray and cook at 400F for 30 minutes, turning half way through.

2) Heat a little oil in a large pan and add the onions, mushrooms and garlic and cook for 5 minutes.

3) Add the tomatoes and cook for 3 minutes and then add the spinach and basil and cook for a another minute.

4) Start assembling by putting some of the tomato sauce on the bottom of a 12 inch baking dish. Top with some eggplant slices, a little parmesan and some cracked black pepper.

5) Repeat this process and finish with a layer of tomato sauce. Pour over the beaten egg and sprinkle with the last of the parmesan.

6) Bake at 400F for 25 minutes.

I played with the recipe a bit using just one onion and adding some onion powder, jarred minced garlic, only had 2 cans of chopped tomatoes so I used one can of tomato sauce and one of the cans of chopped tomatoes were Italian seasoned.  I think you can make it your own very easily – that’s why I love it!

How would you modify the recipe to include your most recent cravings or favorite veggies?

Oh the holidays, full of family, fun, and food.  Lots of food.  I feel like I can’t turn around without bumping into cookies, candy, or cheese balls.  I love cookies, I adore candy, and who doesn’t appreciate a cheese ball?  So, I guess what I’m saying is yay, holiday food!

My favorite holiday food is cookies.  Gingerbread, peanut butter, snicker doodles, chocolate crinkles, and the classic sugar cookie.  I can eat sugar cookies until the cows come home (and I secretly hope they never come home).  Recently, I went to a holiday cookie swap.  Everyone brought their favorite cookies and we swapped, ate, talked, and ate some more.

But, lately, I have had the self-control of a five year old when it comes to food.  I want to eat and I want to eat it all now.  I figure baby and momma’s gotta eat, right?  And, eat we do.  So, needless to say, this cookie swap was a bit out of hand.  I ate more cookies than three non-preggers combined.  But, who’s counting?

You would think that after 14 cookies, I wouldn’t be hungry.  But no, I went home and polished off some cheese and a peanut butter sandwich. Which leads me to the conclusion, that cookie swaps are good and eating after cookie swaps are also good.

Sugar Cookies

1 cup unsalted butter, softened
2/3 cup sugar
1 large egg
1/4 teaspoon baking powder
1/8 teaspoon salt
1 1/2 teaspoons vanilla
2 1/3 cups all-purpose flour

Using an electric mixer, beat the butter and sugar until very fluffy and well blended. Add and beat in the egg, baking powder, salt, and vanilla until evenly incorporated. Stir in flour until well blended and smooth.

Divide the dough in half and shape into circles. Place each circle between large sheets of wax paper. Roll out a scant 1/4-inch thick, checking the underside frequently and smoothing out any creases. Keeping the wax paper in place, layer the rolled dough on a tray and refrigerate for 20 to 30 minutes, or until cold and slightly firm but not hard.

WHEN READY TO BAKE:
Preheat the oven to 350 degrees F. Lightly grease cookie sheets.

Working with 1 portion of dough (leave the other refrigerated), gently peel away and replace 1 sheet of the wax paper. (This will make it easier to lift the cookies from the paper later.) Peel off and discard the second layer. Using 2- or 3-inch cutters, cut out cookies. With a wide spatula, carefully transfer them from the wax paper to the cookie sheets, spacing about 1 inch apart.

Roll any dough scraps between wax paper and continue cutting out cookies until all the dough is used. If the dough becomes too warm to handle at any point, refrigerate it again briefly. If desired, very lightly sprinkle the cookies with colored sprinkles or colored decorating sugar.

Bake, 1 sheet at a time, in the upper third of the oven for 6 to 9 minutes, or until cookies are just slightly colored on top and slightly darker at the edges. Rotate sheets halfway through baking for even browning. Transfer sheets to wire racks and let cookies firm up, 1 to 2 minutes, Then transfer the cookies to wire racks and let stand until thoroughly cool.

Store, airtight, for 1 or 2 weeks, or freeze for up to 1 month.
